One of my favorite easy and fun meals to make during Halloween is these spooky stuffed bell peppers! They are so adorable and so delicious. For some reason, I think they taste better than regular bell peppers. Does that make sense? They are just so cute it makes them taste better! 

With this recipe, I ALWAYS have extra filling. You can use as many bell peppers as you want and save the filling to just eat on its own. This filling goes great by itself as well, so save it and pack it for lunch or use it for dinner the next day or do what I do and eat it as your second dinner as you clean the kitchen.

Ingredients

  • 3 Orange Bell Peppers
  • 1 Tablespoon of Olive Oil
  • 1 pound of Italian sausage 
  • 1 yellow onion, diced
  • 2 teaspoons of garlic powder
  • 1 teaspoon Italian seasoning
  • 1 1/4 teaspoon salt 
  • 1/2 teaspoon pepper
  • 1 cup marinara sauce
  • 1/2 cup uncooked white rice
  • 3/4 cup chicken broth 
  • 1 cup shredded mozzarella cheee 

Instructions

Step 1

Preheat oven to 350 degrees. Cut the tops off the bell peppers, remove the seeds. Use a sharp knife and gently carve the faces in your peppers. Place the bell peppers in an oven safe dish and bake for 20 minutes to soften 

Step 2

While the bell peppers are baking, make the filling. Heat a large skillet over medium heat with the olive oil. Add the Italian Sausage and brown. Once the sausage is browned, ad the diced onion and sauté until the onion is transluscent. 

Step 3

Next, add the uncooked rice, marinara sauce, and all of the seasonings. Stir to combine. Place a lid on the skillet, allow mixture to come to a full oil, then bring to a simmer for 20 minutes. After the 20 minutes, remove from heat and let sit for 5 minutes 

Step 4

Spoon the mixture into bell pepper (you will have extra filling!) Top the bell peppers and mixture with mozzarella cheese and place back in oven until the cheese is melted.
