Ingredients

  • 3 Roma Tomatoes
  • 1 yellow onion
  • 4 cloves of garlic
  • 3 basil leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 oz linguine (or other pasta of your choosing)

Instructions

Step 1

Prepare pasta according to directions on the package.

Step 2

Finely dice your onion, garlic and Roma Tomates.

Step 3

Heat olive oil in a skillet over medium heat. Add the onions and sauté until translucent, about 5 minutes. Add in your garlic and stir until fragrant, or about one minute.

Step 4

Add the diced tomatoes, stir to combine and cover. Simmer over medium heat for about 10 minutes, stirring occasionally.

Step 5

Add salt and pepper to taste and chopped up basil leaves and let simmer uncovered for another 5-10 minutes. You can let this simmer on low for even longer if you want to let the flavor seep in more.

Step 6

Once the noodles and the sauce are done cooking, add the noodles to the sauce. Twirl together and top with fresh parmesan cheese. Serve warm and Enjoy!
