Cucumber and Tomato Salad
There’s something magical about spring. The days grow longer, the breeze gets warmer, and everything around us starts to bloom, including what’s inside your weekly produce box. This week, we’re spotlighting two seasonal stars: crisp cucumbers and vibrant heirloom tomatoes. They come together in one of our favorite springtime dishes: a simple, refreshing persian cucumber and heirloom tomato salad.
This salad is a combination of everything we love about this time of year: fresh flavors, vibrant colors, and the ease of throwing together something beautiful and nourishing in just minutes. Whether you’re enjoying it as a light lunch on the porch or a side dish at your weekend barbecue, it’s bound to be a hit.
Why This Salad Shines:
- Heirloom Tomatoes – These beauties come in all shapes, sizes, and colors. Their sweet, juicy flavor is unmatched, especially when they’re freshly picked and ripe.
- Persian Cucumbers – These smaller, thinner-skinned cucumbers are super crisp and mild. No need to peel or seed them! They add the perfect fresh crunch and pair beautifully with the tomatoes.
- Simple Ingredients, Big Flavor – A drizzle of olive oil, a splash of red wine vinegar, fresh herbs, and a sprinkle of salt and pepper. That’s all you need to let these fresh ingredients shine.
Ingredients
- 3–4 Persian cucumbers, thinly sliced
- 2–3 heirloom tomatoes, cut into bite-sized chunks
- 1 avocado- dicedÂ
- Handful of fresh basil roughly chopped
- 1/2 cup mozzarella pearls (drained)
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions
Step 1
In a large bowl, combine the tomatoes, cucumber, mozzarella pearls and avocado
Step 2
Drizzle with olive oil and vinegar
Step 3
Sprinkle with salt, pepper, and fresh herbs.
Step 4
Toss gently to combine. Taste and adjust seasoning as needed.
Step 5
Let sit for 10–15 minutes before serving for maximum flavor.
