Creamy Zucchini and Potato Soup
As someone who loves to cook, I’m always on the lookout for simple, comforting meals, especially on those winter days when all I want to do is curl up with something warm. One of my go-to recipes during this time of year is a creamy zucchini and potato soup. It’s easy to make, incredibly cozy, and full of fresh, hearty flavors that just hit the spot. The best part about this recipe is how versatile it is. You can tweak it to your liking by adjusting the garlic, adding a bit more seasoning, or even throwing in some fresh herbs. And if you’re feeding a crowd, it’s easy to double or even triple the recipe.
To make the soup extra creamy and rich, I add a little cheese and heavy cream. This enhances the flavor, creating a velvety texture that’s irresistible. Ingredients
- 2 tbsp Butter
- 1 Yellow Onion, diced
- 2 garlic cloves, minced
- 1 tsp of each seasoning: thyme, oregano, salt and pepper
- 3 zucchini, cut into chunks
- 1.5 cups of chicken brothÂ
- 1/2 tbsp soy sauce
- 1 Russet Potato
- 1/4 cup heavy creamÂ
- 1/2 cup cheddar cheese
Instructions
Step 1
Melt butter in the soup pot, add diced onions and saute until soft. Then add in garlic, zucchini and seasonings.
Step 2
Peel the potatoes and cut into equally sized pieces.
Step 3
Add potatoes, chicken broth, and soy sauce into your pot. Bring the mixture to a boil, then reduce to a simmer and cover.
Step 4
Simmer, covered, for about 20 minutes. Test the vegetables with a fork. They should be very tender.
Step 5
Using either an immersion blender to blend or transfer carefully to a blender.
Step 6
Stir in the cheese and heavy cream, stir to combine. Serve hot and enjoy!
