Cauliflower, Zucchini and Celery Soup

A good soup doesn’t need a lot if you are using quality ingredients. Fresh vegetables and savory bone broth is really all you need to whip up a soup the whole family is guaranteed to enjoy.

This soup is so easy to make, it makes the whole house smell incredible and it is good for you! And, BIG bonus, all of the ingredients in this soup (minus the beans) can be found at Fresh Generation Foods!

One of my favorite components of this soup is the shallots. Cooked shallots add a very delicate and sweet flavor. This flavor is complimented perfectly with fresh vegetables and broth. 

We use Pomponio Ranch Beef Bone Broth in all of our soups. I promise once you use this bone broth for your soup, you will never look back. The flavor is rich and it boasts an impressive amount of protein, which we love in our house!

 

 I like adding the Cannelini beans to the soup because it adds another dimension and serves as another source of protein to make this soup a balanced meal all on its own. In the spirit of honesty, I usually use canned beans because it makes that recipe that much easier for a busy schedule. But fresh Cannellini beans are amazing if you choose to go that route. If your family doesn’t like Cannellini beans you can opt to leave them out or substitute them with another type of bean or even a small pasta such as a macaroni noodle. 

As for the seasoning, I like to keep it simple. I use salt, pepper, garlic powder and sometimes I throw in paprika and cayenne pepper. The seasoning of this soup is totally up to you! I like to change it up every once in a while. If I happen to have fresh garlic on hand I usually mince that and saute it with the shallots instead of using garlic powder. 

In my mind, no good soup is complete without a piece of toast. I love dipping toast in soup to soak up all that extra liquid-y goodness! Of course, my go to is sourdough bread from Rosalind’s Bakery
