Brussels Sprouts with Shallots and Pancetta
Fall is here and I could not be more ecstatic. As much as I love summer fruits, there is something about the fall season that brings my soul to life. I am a big fan of comfort recipes and warm dishes shared with those I love most, and this is the perfect time to break those recipes out!
I love whipping up these brussels sprouts with shallots. It is a crowd favorite in my house and it is such an easy recipe. This dish is a great side for just about anything. And, it is so easy to double or triple depending on how many people you are feeding. It is cozy, it is delicious, and it packs quite the nutrient dense punch. Really, what more could you ask for?

Ingredients
- 1 pound brussels sprouts
- 1 shallot
- 2 tablespoons olive oil
- 4 oz pancetta or bacon
- Garlic powder to taste
- Salt and pepper to taste
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Trim the brussels sprouts and cut them lengthwise. Cut the shallots to a similar size as the brussels sprouts.
Step 3
In a large bowl, combine all of the ingredients. Toss to coat evenly. Spread mixture into an even layer on a parchment paper lined baking sheet.
Step 4
Roast for 20 to 25 minutes, until tender and caramelized. Toss twice during roasting to ensure everything is cooked evenly.
